I think I got this recipe from the Food Network.
- 4 boneless, skinless chicken breasts
- 1 cup buttermilk
- 1 1/2 cup breadcrumbs
- 1/2 cup Parmesan cheese
- 1/2 teaspoon paprika
- 1/2 teaspoon dry mustard
- Salt and pepper to taste
1. Preheat oven to 400F.
2. Gently pound the chicken breasts until they are about 1/4 inch thick. Cut chicken into smaller pieces. Place chicken in a bowl and marinate in the buttermilk overnight, if possible (I didn’t). Otherwise, just dip the chicken in the buttermilk before coating.
3. In a shallow dish, mix together the breadcrumbs, Parmesan cheese, paprika, mustard, salt and pepper. Coat the chicken in the breadcrumb mixture and place on baking sheet. Let coating sit for 10 min.
4. Bake for 8 min, until cooked through.
Verdict: These didn’t really have the cheesy taste I was hoping for.
