I found this recipe online, but I am not sure where.
- 1/2 cup butter
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup mashed bananas
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt (we didn’t use because we use salted butter)
- 3/4 cup chocolate chips
- In a large bowl, cream together butter and sugar. Add eggs, one at a time. Add vanilla and mashed bananas.
- In another bowl, mix together the flour, baking soda and salt (if using) and add to the wet ingredients. Add chocolate chips.
- Bake at 350F for 25 minutes (this is for 12 regular sized muffins. We made 6 large muffins, so ours needed closer to 35 minutes baking time).
Verdict: This were delicious. The tops of the muffins were crispy while the centres were soft. The banana taste was present without being overpowering.
